CAROLINA COLESLAW recipe (for WB preserving)
The most delicious pantry staple that you can make and use everyday.

Ingredients
Cabbage *
Carrot
Onion
Salt
White or (ACV)
Sugar
Celery Seed
Mustard Seed
Red bell pepper (optional)
Instructions
1. Chop up the cabbage, carrot, and onion, place in a bowl, add in the salt, mix well, then cover, and let sit for 2 hours.
2. Meanwhile, prepare your preserving jars, lids, and rings as you would for water bathing.
3. Prepare your water bath so it's ready to go after the cabbage mixture has rested for 2 hours.
4. Then rinse the cabbage mixture several times in a colander and set aside.
5. Brine, in a pot, combine the vinegar, sugar, water, celery seed, and mustard seed. Bring to a boil and let it boil for 1 minute. Stir consistently, then remove from the heat.
6. Fill jars with the cabbage mixture, and pack tightly. Leave 1 inch head space.
7. Pour the brine into the cabbage filled jars and fill to the 1 inch headspace.
8. Wipe the rims of the jars with a clean cloth, put lids on, then the rings on and tighten.
9. Place jars in the water bath. Hot in hot, you want the temperature of the jars, filling and water bath pot to be around the same. Water bath for 15 minutes from a rolling boil.
10. Once done, remove the jars from the water bath and set aside on a towel.
11. Leave to cool for 24 hours, then move to your food storage shelves. Coleslaw will be ready to eat after 4 weeks.
This coleslaw can be served and eaten as is, served up as a side salad, strained through a colander and have mayo or aioli added, used as a filling for tacos, burritos, wraps, spring rolls, dumplings, also added into crock pot stews 1 hour prior to serving and any other meals that require a little bit of tangy, sweet and crunch added. You'll be surprised that the cabbage and carrot stay crispy after water bathing.
* Cabbage - If using red cabbage, the brine will turn purple.
You can add more or less sugar to the brine depending on how sweet or tangy you like it.
